It's raining today. Real rain, that keeps falling steadily all night and day. It's committed. It's so beautiful. People are out in in, kids are dancing in it, and nobody minds in the slightest, even though the concrete can't be poured, and the sports can't be held. It's a minor inconvenience nobody minds tolerating to have green things live. Not to mention us. We like to water too. Water for life.
One week into the 6 week advent fast and we're doing o.k. Not even 37 C degrees has worn us out too much.
Butterless Chickpeas
A bit like butter chicken. I don't really like chickpeas, but in this recipe they're very nice.
2 400g cans chickpeas
2 tsp ground coriander
2 tsp cumin
1 tsp paprika
1 tsp tumeric
1 tsp dried ginger
2 cloves garlic
1 400g can tomatoes
juice half a lemon
3 tbs ground almond meal
2 tbs olive oil
salt
Combine the chickpeas, spices and tomatos and gently simmer for 20 - 30 minutes. Add more water if necessary.
Add the almond meal, lemon juice and olive oil.
Stir through.
Serve over a bed of rice.
