Here is my most delicious PPP (pesto, pumpkin, pasta) salad I invented this night.

Mix together in a really big bowl
500g hot cooked pasta
pesto
Then stir through
1/2 salad onion thinly sliced
2 chicken fillets thinly sliced and shallow fried in olive oil until brown all over
a handful of baby spinach
a handful of rocket or other lettuce torn into small pieces
squeeze in the juice of 1/2 a small lemon
sprinkle with salt
add a swirl of honey
and lastly stir through
1/2 a cubed and roasted pumpkin

Season with salt and pepper as desired.

Delicious

Pesto
Whiz in the blender until all chopped up into something like, well, pesto.
1 bunch basil
100g pinenuts
two good sloshes of olive oil
swirl of ume vinegar (or whatever vinegar you have, but the ume/umeboshi is really good, great to put on stirfried veges too)
1 clove crushed garlic if you really like

If I don't pick away all the leftovers tonight, I'm having it for lunch. My keyboard is covered in my greasy PPP fingerprints.
I wonder how it would taste with sweet potato... mmm, roast sweet potato...
