I'm into salad at last

I'm over pizza.
I've finally discovered the key to a good salad.
A recipe.
Salad when I was a kid meant iceberg lettuce, quartered tomato and sliced cucumber. That's it.
I've spent 10 years avoiding salad, cos I thought salad meant lettuce.

These are just so yum, and I'm so proud of myself for finally making a good salad, that I just had to share these with you.

Warm balsamic lamb salad
Bake 600g of pumpkin cut into small cubes
BBQ for a few minutes 1 onion sliced into thin wedges and sprinkled with salt
Crumble 35g feta into olive oil (garlic and herb infused olive oil is yummy)
Mix these with 60 grams wild rocket, baby spinach, and other mixed lettuces.
Serve with 600g BBQed lamb or beef marinated in 1 tablespoon each of olive oil and balsamic vinegar
Eat.
Yum.

Cucumber salad
1 grated carrot
1 grated apple
2 tbs pumpkin seeds/pepitas/sunflower seeds
1/2 cup pea, mung bean and lentil sprouts
1/2 cucumber cut into chunks
Lettuce
1 tbs sesame oil
1 tbs tamari/soy sauce
Toss.
Eat.
Yum.
