Most fantastic dinner last night

Last nights dinner, baked fish with ginger, lemon and garlic, beetroot and rocket salad and baked potatoes, was fantastic.

There's nothing like buying fresh food from the market, and cooking it up that night for dinner. We got all adventurous and tried some new recipes too.

I'm never buying fish from the supermarket again. This blue grenadier was so delicious, and light and soft. We spread ginger, garlic and lemon over the top, wrapped it in foil, and baked it until the fish flaked when we picked at it with a fork (about 1/2 hour).

I've never cooked beetroot before. I chopped the leaves off, peeled and quartered it, then laid on top of the leaves in the baking dish along with a halved lemon.

I baked it for about 40 minutes, then laid it on top of fresh baby spinach and rocket leaves, sprinkled some sunflower seeds on top, and dressed it with the juice of the baked lemons and a bit of olive oil.

Scrumptious.

Then for dessert I cooked some puff pastry squares, pushed in the puffed up middles, filled it with home made custard (another first) and filled it with strawberries. Fabulous - although the custard was a bit sweet. 1 cup of hot milk with 50 grams of sugar, stirred into 3 egg yolks with 25 grams of sugar, then heated until thick.

Next time I might half the sugar, and use rapadura sugar (evaporated cane juice) to make it a bit healthier.
