This is sooooo yummy I had to share.
Rub 30 grams butter into
1 cup self raising flour and (or flour with baking powder)
1/2 cup sugar
until mixture resembles fine breadcrumbs
Mix in
1 egg
2 teaspoons water
until a dough forms
Roll out to fit a 20cm square tin
Cover in a thin layer of Quondong Jam (or Raspberry)
Beat
1 egg and
1/2 cup caster sugar
and stir in 1 cup of shredded coconut
Spread over the top of jam. Sprinkle with extra coconut.
Bake at 170 C for 20 minutes or until golden brown
