Start with good granary bread, and slice it yourself. It'll naturally be quite thick (especially in one corner) and that's cool.
Butter it. (Because "to margarine" isn't a verb.)
Cover the lower slice in fairly thinly sliced cucumber.
If you're using tomato, they go now. (They're optional. You could put them on a side plate, sliced with ground pepper, salt, malt vinegar and bits of coriander leaves. Mmm.)
Sprinkle with one very thinly sliced spring onion.
Add a layer of rocket from your garden or window sill. (Perhaps I should have mentioned the homegrown rocket a few months earlier. It's OK, you can buy some if necessary.)
Sprinkle with chopped mint and coriander leaf, and if you like basil.
Now the lettuce. Tear Kos leaves into three and pile them up. More than that. C'mon! More than you could ever imagine would be necessary, sensible or even safe. That's right.
Now sprinkle unstingily with ground pepper and salt.
Mmmm. Summer.
