I went to a bit of a shindig today and one of my clients was there and she had never been to one of these things before so I was schooling her on the finer points of behaviour at this sort of affair.
Come to the realisation very early on that the human stomach has limits. And because of that don't fill it with foods that are more common. For example take the lobster tail canape over the roast beef swirl on bread. Oh why can't you have that tempura prawn Chops, I filled with crudites and dip.
Be prepared to grill the waiter as to what they are carrying. If they are in a decent establishment they should know what they are serving. Also be prepared to ask them what else is of offer. So you can know that the venison carpaccio is toward the top of the pile and well worth your trying.
Try new foods that you have never had before but may have heard of. Because if you don't like it you haven't paid for it except with a bit of stomach space.
Posture is important always make sure that the group you are standing in has a nice open arc so the server finds it easy to serve to your group. Also feel free to make small nice comments to the staff. This is quite a tricky art. But if you engage them with a bit of banter they usually will come back tot he funny pleasant man rather than the grumpy guy that ignores the staff and just takes the food.
