Fresh Ginger and Chocolate Gingerbread

I made this last week and it was oh-so-tasty. I love ginger.

2 tblspons finely chopped fresh ginger
1 tblspn sugar
2 cups SR flour
2 tspns ground ginger
3/4 tspn cinnamon
1/4 tspn ground cloves
160g unsalted butter @ room temperature
3/4 cup brown sugar
3 eggs
1/2 cup treacle
150g dark chocolate - 50g melted and cooled, 100g chopped
1 cup buttermilk (or normal milk with 1 tblspn of white vinegar)
1 tblspn finely chopped stem ginger in syrup (apparently from asian groceries but I just used uncrystallised ginger)
Icing - 75g melted dark chocolate,
1 tblspn coffee,
45g unsalted butter,
3 tblspns icing sugar

Preheat oven to 180 degrees. Butter 9 inch square baking tin and line the bottom. Put fresh ginger and sugar into a bowl and put aside. Sift flour, baking soda and spices together. In another bowl, beat together the butter and sugar. Add eggs one at a time. Pour in treacle and beat. Add melted chocolate and sugared ginger. Alternate adding milk and sifted ingredients. Mix only until just blended. Fold in chocolate and syrup ginger. Bake for 40 minutes. Ice the cake once it has cooled. Enjoy!
