I have typed the Pashka recipe out before and then I realised my wiblog wasn't working so here I go again...
Russian Easter Cheese Dessert (Pashka)
500g Ricotta cheese
125g unsalted butter
2/3 cup caster sugar
1/4 tsp vanilla essence
1 egg yolk
1/2 cup chopped blanched almonds
1/2 cup mixed peel, finely chopped
1/2 cup raisins, finely chopped
1 tblspn chopped glace cherries
1 cup sour cream
1) Place the ricotta cheese into a muslin cloth and hang for 2 hours to allow water to drain.
2) Cream the butter and sugar until light and fluffy. Add vanilla, egg yolk and drained cheese. Mix well and add nuts and fruits. Stir in the sour cream.
3) Line a small strainer with muslin cloth and pack in the mixture. Place into a deep bowl so that it sits off the bottom. Place a weight on top of the mixture. Allow to drain for about 3-6 hours or overnight.
4) Unmould onto a serving platter. Decorate with fruit and nuts and serve with yeast buns or Kulich, the traditional Easter buns.
This recipe worked so well and everybody went back for seconds. It is oh-so-yummy.
The singing I did over the Easter weekend went really well also.
