Yes, I know. It's still not cake. It's Lent, have a vegan chilli recipe instead.
Serves 4
2 tbsp olive oil
1 onion, chopped
1 carrot, chopped
3 cloves garlic, chopped
2 sticks celery, sliced
1 green pepper, chopped
1 red pepper, chopped
4oz green lentils
2 tsp flaked chillis
1 tsp ground cumin
1tsp ground coriander
1 bay leaf
1 tsp smoked paparika
1 tin tomatoes
1/2 pint vegetable stock
1 tin kidney beans, drained
1 tin chick peas, drained
4oz frozen sweetcorn
4oz frozen peas
Heat the oil, add the onion, carrot, garlic and peppers, brown for 10 minutes.
Add the lentils and spices, the tomatoes and the stock. Simmer for 50 minutes.
Add the kidney beans, chick peas, frozen sweetcorn and peas, simmer for 10 minutes. Remove the bay leaf.
Serve with rice or jacket potato.
