A very readable book about minority languages in Western Europe is Helena Drysdale's "Mother Tongues" published by Picador.

It is written in a very flowing travelogue style as she talks about the geography, history and culture (as well as the language) of the areas she travels to with her husband and two small children in their campervan. It has a certain poignancy about it because many of the languages she writes about are struggling to survive.

Easy to dip into if you are interested in a particular area of Europe.
