Deeleea has requested on our Greenbelt thread that I post my blackberry flapjack recipe so that the Ozzies at Blackstump can recreate our Greenbelt wiblog party experience. To fully recreate the experience you will of course need boxes of wine, tubes of Pringles and conversation which never veers too far from the surreal, and the flapjacks will need to make their appearance in a humungous piece of tupperware. With that proviso out of the way, I'm always glad to be of service, so here it is:
Ingredients (this will make a lot - I doubled the recipe I got as I didn't have a small enough cake tin - this amount will fill a normal sized roasting tin):
8oz (250g) butter
8oz (250g) soft brown sugar
1lb (500g) golden syrup
1lb (500g) porridge oats
blackberries (amount unspecified - just drop them into the mixture till it looks like you've got enough)
Method:
1. Preheat oven to Gas Mark 3 (170 degrees C).
2. Melt the butter in a pan over moderate heat, then add the sugar and syrup; keep on heating and stirring until the mixture is smooth and no sugar grains can be seen.
3. Stir in the oats and mix thoroughly together.
4. Stir in the blackberries.
5. Lightly grease the baking tin, then spoon in the mixture, flattening it into a layer about 1cm thick.
6. Bake for 30 minutes until a rich brown*.
7. Cool for 5 minutes and then cut into fingers. Remove from the tin when cold.
8. Store in an airtight tin (or handy piece of tupperware!). Will keep fresh for up to 3 weeks.
* except that with the blackberries the rich brown will be somewhat, uh, purple-ish.

In other news, today I went back to work. I so so didn't want to go back - even though I like where I work, I like my colleagues and I like most of my clients. But in the last week I've just got in the habit of not getting up with an alarm, and going to lovely gardens, and all that sort of thing, so it was a real effort. I got back to discover that having turned my back for a week my manager has been seconded elsewhere and is no longer available for us, so the plans for my leaving do are in chaos. She gave the wrong date to her PA, so fliers have gone out all over the Trust to say my leaving do is this Friday (it's not, it's on the 28th!). Apart from sorting out that though I managed to get through the day relatively unscathed. I also briefly met the person who will be replacing me, and have arranged for her to come and meet me and my colleague in my last week to give her a bit of an idea about the caseload.
In other other news, as mentioned yesterday my dear friend came round this evening and seemed to really enjoy my detox rabbit food (rice/millet pasta and aduki bean mush). I don't think she was entirely convinced about Earl Grey tea with rice milk (as I'm off dairy) but it could have been worse I guess! Without going into details, I just want to remind myself that this was the evening where we discovered more than we'd ever known before how we've shared so much of the same journey, and she is the person I'm going to miss more than anyone when I move.
She really liked my recent drawings too (showing them to someone in real life is even scarier than posting them up here!). So I'm kinda chuffed about that.
